Method
- Preheat oven to 350°F (175°C).
- Grease and line a loaf pan.
- In a bowl, whisk flour, sugar, baking soda, salt, and cinnamon.
- In another bowl, mix mashed bananas, eggs, oil, milk, and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Gently fold in diced strawberries.
- Pour batter into prepared loaf pan.
- Bake for 50–60 minutes until a toothpick inserted comes out clean.
- Cool completely before slicing.
Notes
- Use very ripe bananas for the best flavor.
- Toss strawberries in a little flour to prevent sinking.
- Add chopped nuts or chocolate chips for variety.
- Store in an airtight container for up to 3 days.
