Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 ripe bananas mashed
  • 1 cup fresh strawberries diced
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • ½ cup milk or yogurt
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease and line a loaf pan.
  3. In a bowl, whisk flour, sugar, baking soda, salt, and cinnamon.
  4. In another bowl, mix mashed bananas, eggs, oil, milk, and vanilla extract.
  5. Pour wet ingredients into dry ingredients and mix until just combined.
  6. Gently fold in diced strawberries.
  7. Pour batter into prepared loaf pan.
  8. Bake for 50–60 minutes until a toothpick inserted comes out clean.
  9. Cool completely before slicing.

Notes

  • Use very ripe bananas for the best flavor.
  • Toss strawberries in a little flour to prevent sinking.
  • Add chopped nuts or chocolate chips for variety.
  • Store in an airtight container for up to 3 days.
