Preheat oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat.
Cook ground beef and onion until browned.
Add garlic and cook for 30 seconds.
Stir in marinara sauce and Italian seasoning.
Cut biscuit dough into small dumpling-sized pieces.
Spread half the meat sauce in a baking dish.
Layer half the dumplings over the sauce.
Add ricotta and sprinkle mozzarella cheese.
Repeat layers with remaining sauce and dumplings.
Top with remaining mozzarella and Parmesan cheese.
Bake for 30–35 minutes until bubbly and golden.
