Apple Cider Cupcakes with Cinnamon Frosting

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup apple cider
  • ¼ cup sour cream
  • Cinnamon Frosting
  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 –3 tablespoons heavy cream or milk
  • Pinch of salt

Method
 

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Add the dry ingredients alternately with the apple cider and sour cream, beginning and ending with the dry ingredients.
  6. Mix gently until the batter is just combined, being careful not to overmix.
  7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  8. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  10. To make the frosting, beat the softened butter until smooth and creamy.
  11. Gradually add the powdered sugar and cinnamon, mixing until incorporated.
  12. Add the vanilla, salt, and enough cream or milk to reach a smooth, fluffy frosting consistency.
  13. Beat the frosting for 2–3 minutes until light and creamy.
  14. Pipe or spread the cinnamon frosting over the completely cooled cupcakes.
  15. Sprinkle with a little extra cinnamon before serving, if desired.

Notes

  • Use fresh apple cider for the best flavor.
  • Make sure the cupcakes are completely cool before frosting.
  • Do not overmix the batter to keep the cupcakes light and tender.
  • For a stronger apple flavor, simmer the cider until slightly reduced before using it.
  • Store frosted cupcakes in an airtight container in the refrigerator for up to 4 days.
  • Let refrigerated cupcakes sit at room temperature for about 20–30 minutes before serving.
