Apricot Cream Cheese Cookies

Ingredients
  

  • 1 cup unsalted butter softened
  • 4 oz cream cheese softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • ½ cup apricot jam or preserves
  • Powdered sugar for dusting optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a bowl, beat butter and cream cheese until smooth and creamy.
  3. Add sugar and vanilla extract and mix until fluffy.
  4. Gradually mix in flour and salt until dough forms.
  5. Scoop small portions of dough and roll into balls.
  6. Place cookies on prepared baking tray and flatten slightly.
  7. Make a small indentation in the center of each cookie.
  8. Fill each indentation with about ½ teaspoon apricot jam.
  9. Bake for 12–15 minutes until edges are lightly golden.
  10. Cool on a wire rack before serving.

Notes

  • Chill the dough for 15 minutes if it becomes sticky.
  • Use apricot preserves with fruit chunks for extra flavor.
  • Dust with powdered sugar for a bakery-style look.
  • Store in an airtight container for up to 4 days.
