Method
- Preheat oven to 200°C (400°F)
- Rub potatoes with olive oil, salt, and pepper
- Bake potatoes for 40–45 minutes until tender
- In a bowl, mix shredded chicken with BBQ sauce
- Cut open baked potatoes and fluff the inside
- Fill with BBQ chicken mixture
- Top with shredded cheese and return to oven for 5 minutes until melted
- Add sour cream and green onions on top
- Serve warm and enjoy
