Cook chopped bacon in a large skillet over medium heat until crispy.
Remove bacon and set aside, leaving a little bacon fat in the pan.
Add beaten eggs to the skillet and scramble until cooked.
Stir in minced garlic and mixed vegetables and cook for 2 minutes.
Add cooked rice to the skillet and stir well.
Pour in soy sauce and sesame oil and mix until evenly coated.
Return crispy bacon to the skillet.
Toss everything together and cook for another 2–3 minutes.
Sprinkle sliced green onions and black pepper before serving.
