Caprese Chicken with Fresh Mozzarella and Basil

This Caprese Chicken is a fresh, flavorful dish inspired by the classic Italian salad. Juicy chicken is topped with melted fresh mozzarella, ripe tomatoes, and fragrant basil, then finished with a drizzle of balsamic. Light, elegant, and perfect for a healthy meal.

Ingredients
  

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes halved
  • 200 g fresh mozzarella sliced
  • 1/4 cup fresh basil leaves
  • 1 tablespoon balsamic glaze or vinegar
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Season chicken with salt, pepper, and Italian seasoning
  2. Heat olive oil in a pan over medium heat
  3. Cook chicken for 5–6 minutes per side until golden and cooked through
  4. Add tomatoes to the pan and cook briefly until softened
  5. Place mozzarella slices on chicken and cover until melted
  6. Remove from heat and top with fresh basil
  7. Drizzle balsamic glaze over the chicken
  8. Serve warm and enjoy

Notes

  • Use fresh mozzarella for the best texture
  • Do not overcook chicken to keep it juicy
  • Add garlic for extra flavor
  • Serve with salad or pasta
  • Best enjoyed fresh and warm
