- Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
- In a bowl, beat butter and powdered sugar until light and creamy.
- Mix in almond extract.
- Gradually add flour and salt until dough forms.
- Gently fold in chopped cherries.
- Scoop small portions of dough and roll into balls.
- Place cookies on baking tray and flatten slightly.
- Sprinkle sliced almonds on top if using.
- Bake for 15–18 minutes until edges are lightly golden.
- Cool on a wire rack before serving.
Notes
- Drain cherries well to avoid excess moisture.
- Chill the dough for 15 minutes if it becomes too soft.
- Dip cookies in melted chocolate for extra flavor.
