Cherry Almond Shortbread Cookies

Cherry Almond Shortbread Cookies are buttery, crumbly, and filled with sweet cherry flavor and a delicate almond aroma. Ingredients
  

  • 1 cup unsalted butter softened
  • ½ cup powdered sugar
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • ½ cup maraschino cherries finely chopped and drained
  • 2 tablespoons sliced almonds optional topping

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a bowl, beat butter and powdered sugar until light and creamy.
  3. Mix in almond extract.
  4. Gradually add flour and salt until dough forms.
  5. Gently fold in chopped cherries.
  6. Scoop small portions of dough and roll into balls.
  7. Place cookies on baking tray and flatten slightly.
  8. Sprinkle sliced almonds on top if using.
  9. Bake for 15–18 minutes until edges are lightly golden.
  10. Cool on a wire rack before serving.

Notes

  • Drain cherries well to avoid excess moisture.
  • Chill the dough for 15 minutes if it becomes too soft.
  • Dip cookies in melted chocolate for extra flavor.
  • Store in an airtight container for up to 5 days.
