Ingredients
  

  • 6 oz semi-sweet chocolate chopped
  • 1 1/2 cups heavy whipping cream divided
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 2 large egg yolks optional for extra richness
  • Pinch of salt

Method
 

  1. Melt chopped chocolate with 1/2 cup heavy cream in a heatproof bowl over simmering water or microwave in short intervals.
  2. Stir until smooth and let cool slightly.
  3. Whisk egg yolks into the warm chocolate mixture if using.
  4. In a separate bowl, whip remaining 1 cup heavy cream with sugar, vanilla, and salt until soft peaks form.
  5. Gently fold whipped cream into the cooled chocolate mixture in batches.
  6. Spoon mousse into serving glasses or bowls.
  7. Chill at least 2 hours until set and creamy.
  8. Garnish with whipped cream, chocolate shavings, or berries before serving.

Notes

  • Do not overheat the chocolate, or it may seize.
  • Fold gently to keep the mousse light and airy.
  • Use high-quality chocolate for the best flavor.
  • Store covered in the refrigerator up to 3 days.
