Cinnamon Rhubarb Crisp with Oat Topping

A warm and comforting dessert made with tangy rhubarb and a buttery cinnamon oat topping. This crisp is sweet, slightly tart, and perfectly crunchy on top with a soft fruit filling underneath. It’s an easy homemade treat that tastes amazing served warm.

Ingredients
  

  • For Filling:
  • 4 cups – Rhubarb chopped
  • ¾ cup – Granulated sugar
  • 1 tbsp – Cornstarch
  • 1 tsp – Vanilla extract
  • For Oat Topping:
  • 1 cup – Rolled oats
  • ¾ cup – All-purpose flour
  • ½ cup – Brown sugar
  • 1 tsp – Ground cinnamon
  • ½ cup – Butter melted

Method
 

  1. Preheat oven to 180°C (350°F).
  2. Place chopped rhubarb in a greased baking dish.
  3. Mix sugar, cornstarch, and vanilla with rhubarb.
  4. In another bowl, combine oats, flour, brown sugar, and cinnamon.
  5. Pour melted butter into oat mixture and stir until crumbly.
  6. Sprinkle topping evenly over rhubarb filling.
  7. Bake for 35–40 minutes until golden and bubbly.
  8. Let cool slightly before serving.

Notes

  • Serve warm with vanilla ice cream for extra flavor.
  • Add strawberries for a sweeter fruit filling.
  • Use old-fashioned oats for the best texture.
  • Store leftovers covered in the refrigerator.
