Ingredients
  

  • 2 large cucumbers sliced
  • 2 cups cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley or dill
  • 1/4 cup crumbled feta cheese optional

Method
 

  1. Wash and slice cucumbers evenly.
  2. Halve cherry tomatoes and thinly slice red onion.
  3. Combine cucumbers, tomatoes, and onion in a large bowl.
  4. Whisk olive oil, vinegar or lemon juice, salt, and pepper in a small bowl.
  5. Pour dressing over vegetables and toss gently to coat.
  6. Sprinkle fresh herbs and feta cheese on top if using.
  7. Chill 20–30 minutes before serving for enhanced flavor.

Notes

  • Use firm cucumbers for the best crunch.
  • Add avocado slices for extra creaminess.
  • Adjust vinegar or lemon juice to balance acidity.
  • Store refrigerated up to 2 days and stir before serving.
