- Preheat oven to 150°C (300°F) and line a baking tray
- In a bowl, beat egg whites with cream of tartar until stiff peaks form
- In another bowl, mix egg yolks, cottage cheese, sweetener, and vanilla
- Gently fold egg white mixture into yolk mixture
- Fold in blueberries carefully
- Spoon mixture onto tray in small rounds
- Bake for 20–25 minutes until set and lightly golden
- Let cool before serving

- Fold gently to keep bread airy
- Use fresh blueberries for best flavor
- Do not overbake to maintain softness
