Ingredients
  

  • 3 eggs separated
  • 1/2 cup cottage cheese
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon sweetener or honey optional
  • 1/2 teaspoon vanilla extract
  • 1/2 cup blueberries

Method
 

  1. Preheat oven to 150°C (300°F) and line a baking tray
  2. In a bowl, beat egg whites with cream of tartar until stiff peaks form
  3. In another bowl, mix egg yolks, cottage cheese, sweetener, and vanilla
  4. Gently fold egg white mixture into yolk mixture
  5. Fold in blueberries carefully
  6. Spoon mixture onto tray in small rounds
  7. Bake for 20–25 minutes until set and lightly golden
  8. Let cool before serving

Notes

  • Fold gently to keep bread airy
  • Use fresh blueberries for best flavor
  • Do not overbake to maintain softness
  • Store in fridge and reheat lightly
  • Best enjoyed fresh
