Creamy Pesto Pasta Salad with a Velvety Finish

A rich, creamy twist on classic pesto pasta salad made with a smooth, velvety dressing. This dish combines fresh basil pesto with a creamy base for extra indulgence. Perfect for picnics, potlucks, or a refreshing yet satisfying meal.

Ingredients
  

  • 2 cups pasta penne or fusilli
  • 1/2 cup basil pesto
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup grated parmesan cheese
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh basil chopped

Method
 

  1. Cook pasta according to package instructions then drain and cool completely
  2. In a bowl mix pesto mayonnaise sour cream parmesan olive oil and lemon juice until smooth
  3. In a large bowl combine cooked pasta cherry tomatoes and cucumber
  4. Pour creamy pesto dressing over pasta and toss until well coated
  5. Season with salt and pepper to taste
  6. Garnish with fresh basil and chill for 15-20 minutes before serving

Notes

  • Use Greek yogurt instead of sour cream for a lighter option
  • Add grilled chicken or shrimp for extra protein
  • Adjust creaminess by adding more or less mayonnaise
  • Best served chilled and consumed within 2 days
