Crumb Topped Cherry Pie Bars Recipe

These crumb topped cherry pie bars are buttery, sweet, and packed with juicy cherry filling. A soft shortbread-style base holds the cherries while a golden crumb topping adds the perfect crunchy bite. They taste just like cherry pie—but easier to make and easier to share.

Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsalted butter melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • cups cherry pie filling
  • ½ tsp cinnamon optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. In a bowl mix flour, sugar, baking powder, salt, egg, melted butter, and vanilla.
  3. Stir until a crumbly dough forms.
  4. Press about two-thirds of the dough evenly into the prepared baking pan.
  5. Spread cherry pie filling over the base layer.
  6. Sprinkle the remaining dough crumbs evenly over the cherries.
  7. Bake for 30–35 minutes until the top turns golden brown.
  8. Allow bars to cool completely before slicing into squares.

Notes

  • Use homemade cherry filling for a richer flavor.
  • Add chopped almonds or walnuts for extra crunch.
  • Chill bars for cleaner slices before cutting.
  • Store in an airtight container for up to 3 days.
