Curried Apricot Chicken Sosaties are a flavorful South African-inspired dish featuring tender chicken marinated in a sweet and spicy apricot curry sauce. The chicken is skewered and grilled until juicy and slightly caramelized. Ingredients
  

  • 1 ½ lbs chicken breast cut into cubes
  • ½ cup apricot jam
  • 2 tablespoons curry powder
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 small onion cut into chunks
  • 1 bell pepper cut into chunks
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Method
 

  1. In a bowl, mix apricot jam, curry powder, soy sauce, lemon juice, garlic, olive oil, salt, and black pepper.
  2. Add chicken cubes to the marinade and mix well.
  3. Cover and refrigerate for at least 2 hours to marinate.
  4. Preheat grill or oven broiler to medium-high heat.
  5. Thread marinated chicken, onion, and bell pepper onto skewers.
  6. Place skewers on grill or baking tray.
  7. Cook for 12–15 minutes, turning occasionally.
  8. Brush extra marinade over skewers while cooking.
  9. Grill until chicken is fully cooked and lightly charred.
  10. Serve hot with rice or flatbread.

Notes

  • Soak wooden skewers in water for 20 minutes before grilling.
  • Add pineapple chunks for extra sweetness.
  • Adjust curry powder based on spice preference.
  • Serve with cucumber yogurt sauce for balance.
