In a bowl, mix apricot jam, curry powder, soy sauce, lemon juice, garlic, olive oil, salt, and black pepper.
Add chicken cubes to the marinade and mix well.
Cover and refrigerate for at least 2 hours to marinate.
Preheat grill or oven broiler to medium-high heat.
Thread marinated chicken, onion, and bell pepper onto skewers.
Place skewers on grill or baking tray.
Cook for 12–15 minutes, turning occasionally.
Brush extra marinade over skewers while cooking.
Grill until chicken is fully cooked and lightly charred.
Serve hot with rice or flatbread.
