Ingredients
  

  • 2 cups milk
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp butter
  • 3 ripe bananas sliced
  • 1 pack vanilla wafers or biscuits
  • 1 cup whipped cream

Method
 

  1. Heat milk in a saucepan over medium heat
  2. In a bowl whisk sugar, cornstarch, and egg yolks
  3. Slowly add warm milk to the mixture while whisking
  4. Return mixture to pan and cook until thickened
  5. Add butter and vanilla extract and mix well
  6. Let pudding cool slightly
  7. Layer wafers, banana slices, and pudding in a dish
  8. Repeat layers and top with whipped cream
  9. Chill in the refrigerator for at least 2 hours

Notes

  • Use ripe bananas for the best sweetness
  • Stir constantly to avoid lumps in the pudding
  • Chill longer for better flavor and texture
  • Add crushed cookies on top for extra crunch
