Delicious Black Bean and Beef Enchilada Casserole

This Delicious Black Bean and Beef Enchilada Casserole is cheesy, hearty, and packed with bold Tex-Mex flavor. Layers of seasoned beef, black beans, tortillas, and enchilada sauce bake into a bubbly, comforting dish. It’s perfect for family dinners or meal prep. Top with sour cream and fresh cilantro for extra freshness.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 can black beans drained and rinsed
  • 1 15 oz can enchilada sauce
  • 8 small corn or flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 1/4 cup chopped cilantro optional garnish
  • Sour cream or sliced jalapeños optional for serving

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Brown ground beef with onion and garlic in a skillet, then drain excess grease.
  3. Stir in chili powder, cumin, paprika, salt, pepper, black beans, and half the enchilada sauce.
  4. Spread a thin layer of enchilada sauce in the baking dish.
  5. Layer tortillas, beef mixture, and shredded cheese.
  6. Repeat layers and finish with remaining sauce and cheese on top.
  7. Bake 25–30 minutes until bubbly and cheese melts fully.
  8. Let rest 5–10 minutes before slicing and garnish with cilantro.

Notes

  • Slightly overlap tortillas for even layering.
  • Add corn or diced bell peppers for extra texture.
  • Use red or green enchilada sauce based on preference.
  • Store leftovers refrigerated up to 3 days and reheat covered.
