Easy Beef Enchiladas Recipe

These Easy Beef Enchiladas are cheesy, saucy, and packed with bold Tex-Mex flavor. Seasoned ground beef wraps inside soft tortillas and bakes under rich enchilada sauce. They’re simple enough for weeknights but satisfying enough for guests. Serve with rice, beans, or a fresh salad.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1 15 oz can enchilada sauce
  • 8 small flour or corn tortillas
  • 2 cups shredded Mexican blend cheese divided
  • 1/4 cup chopped cilantro optional garnish
  • Sour cream or sliced jalapeños optional for serving

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. Brown ground beef with onion and garlic in a skillet, then drain excess grease.
  3. Stir in chili powder, cumin, paprika, salt, and pepper.
  4. Spread 1/2 cup enchilada sauce in bottom of baking dish.
  5. Spoon beef mixture and a sprinkle of cheese into each tortilla and roll tightly.
  6. Place rolled tortillas seam-side down in baking dish.
  7. Pour remaining enchilada sauce evenly over tortillas.
  8. Sprinkle remaining cheese on top.
  9. Bake 20–25 minutes until cheese melts and sauce bubbles.
  10. Garnish with cilantro and serve warm.

Notes

  • Warm tortillas briefly to prevent cracking.
  • Use red or green enchilada sauce based on preference.
  • Add black beans or corn to the beef mixture for extra texture.
  • Store leftovers refrigerated up to 3 days and reheat covered.
