Ingredients
  

  • 2 lbs frozen diced hash brown potatoes thawed
  • 2 cups shredded cheddar cheese divided
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1/4 cup unsalted butter melted
  • 1/2 tsp garlic powder
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1/2 cup crushed cornflakes or breadcrumbs optional topping

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, combine hash browns, 1 1/2 cups cheese, sour cream, soup, milk, melted butter, garlic powder, salt, and pepper.
  3. Mix until evenly combined.
  4. Spread mixture into prepared baking dish.
  5. Sprinkle remaining cheese evenly on top.
  6. Add crushed cornflakes or breadcrumbs if using.
  7. Bake 35–40 minutes until hot and bubbly.
  8. Let rest 5 minutes before serving.

Notes

  • Use freshly shredded cheese for smoother melting.
  • Add cooked bacon or green onions for extra flavor.
  • Cover loosely with foil if the top browns too quickly.
  • Store leftovers refrigerated up to 3 days and reheat covered.
