Easy Frozen Strawberry Yogurt Bites

These delightful little morsels are a refreshing blend of creamy yogurt and sweet strawberries, all wrapped in a crisp chocolate shell. They are the perfect healthy-ish snack for hot days or late-night cravings when you want something sweet but light. Best of all, they are naturally gluten-free and can be customized with your favorite fruits!

Ingredients
  

  • 1 cup fresh strawberries finely diced
  • 1/2 cup Greek yogurt Vanilla or Plain
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil

Method
 

  1. Line a small baking sheet or plate with parchment paper to prevent sticking.
  2. In a medium bowl, combine the diced strawberries, Greek yogurt, honey, and vanilla extract.
  3. Stir the mixture until all the strawberry pieces are thoroughly coated in yogurt.
  4. Scoop small spoonfuls of the mixture onto the prepared parchment paper.
  5. Place the tray in the freezer for at least 2 hours or until the bites are completely firm.
  6. Combine chocolate chips and coconut oil in a microwave-safe bowl and melt in 30-second bursts.
  7. Dip each frozen yogurt bite into the melted chocolate using a fork, then return to the parchment.
  8. Freeze for an additional 10 minutes to allow the chocolate coating to set.

Notes

  • Make sure to dry your strawberries completely after washing to prevent ice crystals from forming.
  • Work quickly when dipping the bites in chocolate so they don't start to melt.
  • Store the finished bites in a freezer-safe bag or container to keep them fresh.
  • If using plain yogurt, you may want to add an extra teaspoon of honey for sweetness.
