Ingredients
  

  • 2 lbs fresh apricots pitted and chopped
  • 1 ½ cups granulated sugar
  • 2 tablespoons lemon juice
  • ¼ cup water

Method
 

  1. Place chopped apricots in a large saucepan.
  2. Add sugar, lemon juice, and water.
  3. Stir well and bring mixture to a boil over medium heat.
  4. Reduce heat and simmer, stirring frequently.
  5. Cook for 25–30 minutes until thickened.
  6. Mash apricots slightly for desired texture.
  7. Test consistency by placing a small spoonful on a chilled plate.
  8. Remove from heat once jam reaches desired thickness.
  9. Let cool slightly before transferring to sterilized jars.
  10. Seal jars and refrigerate once completely cooled.

Notes

  • Use ripe, fragrant apricots for the best flavor.
  • Stir frequently to prevent sticking or burning.
  • Store in the refrigerator for up to 3 weeks.
  • For long-term storage, process jars in a water bath.
