Method
- Place chopped apricots in a large saucepan.
- Add sugar, lemon juice, and water.
- Stir well and bring mixture to a boil over medium heat.

- Mash apricots slightly for desired texture.
- Test consistency by placing a small spoonful on a chilled plate.
- Remove from heat once jam reaches desired thickness.
- Let cool slightly before transferring to sterilized jars.
- Seal jars and refrigerate once completely cooled.
