Ingredients
  

  • 2 tablespoons chia seeds
  • 1 cup unsweetened almond milk
  • 1 –2 tablespoons keto sweetener erythritol or monk fruit
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Fresh berries or nuts optional, for topping

Method
 

  1. In a bowl or jar, combine chia seeds and almond milk
  2. Add keto sweetener, vanilla extract, and salt
  3. Stir well to combine
  4. Let sit for 5 minutes, then stir again to prevent clumping
  5. Cover and refrigerate for at least 2–4 hours or overnight
  6. Stir before serving
  7. Add toppings like berries or nuts if desired
  8. Serve chilled

Notes

  • Stir twice early to avoid clumps
  • Adjust sweetness to taste
  • Chill overnight for the best texture
  • Use coconut milk for a richer version
