Method
- Preheat oven to 180°C (350°F) and grease a loaf pan
- In a bowl, mix almond flour, sweetener, baking powder, and salt
- In another bowl, whisk eggs, melted butter, lemon juice, zest, and vanilla
- Combine wet and dry ingredients and mix until smooth
- Pour batter into loaf pan
- Bake for 35–40 minutes until a toothpick comes out clean
- Let cool completely before slicing
Notes
- Do not overbake to keep bread moist
- Add a sugar-free lemon glaze for extra flavor
- Store in the fridge for longer freshness
- Use fresh lemon juice for the best taste
- Great with tea or coffee
