Ingredients
  

  • 1 1/2 cups almond flour
  • 1/2 cup keto sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/4 cup butter melted
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 180°C (350°F) and grease a loaf pan
  2. In a bowl, mix almond flour, sweetener, baking powder, and salt
  3. In another bowl, whisk eggs, melted butter, lemon juice, zest, and vanilla
  4. Combine wet and dry ingredients and mix until smooth
  5. Pour batter into loaf pan
  6. Bake for 35–40 minutes until a toothpick comes out clean
  7. Let cool completely before slicing

Notes

  • Do not overbake to keep bread moist
  • Add a sugar-free lemon glaze for extra flavor
  • Store in the fridge for longer freshness
  • Use fresh lemon juice for the best taste
  • Great with tea or coffee
