Ingredients
  

  • 4 chicken breasts
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 bell pepper sliced
  • 1 zucchini sliced
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 3 cloves garlic minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano

Method
 

  1. Preheat oven to 200°C (400°F) and line a baking tray.
  2. In a bowl, mix olive oil, balsamic vinegar, honey, garlic, and seasonings.
  3. Place chicken and vegetables on the tray.
  4. Pour the balsamic mixture over everything.
  5. Toss vegetables lightly to coat.
  6. Bake for 25–30 minutes until chicken is cooked through.
  7. Serve warm and enjoy.
