Easy Stuffed Pepper Casserole Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 3 bell peppers chopped
  • 2 cloves garlic minced
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 can 14 oz diced tomatoes
  • 1 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 ½ cups shredded mozzarella or cheddar cheese

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Cook ground beef and onion until browned and drain excess fat.
  4. Add chopped bell peppers and cook for 3–4 minutes.
  5. Stir in garlic and cook for 30 seconds.
  6. Add uncooked rice, beef broth, diced tomatoes, and tomato sauce.
  7. Season with Italian seasoning, salt, and black pepper.
  8. Transfer mixture to a greased baking dish.
  9. Cover with foil and bake for 25 minutes.
  10. Remove foil, sprinkle cheese on top, and bake uncovered for 10 more minutes until cheese melts.
  11. Let rest 5 minutes before serving.

Notes

  • Use brown rice, but increase baking time slightly.
  • Add red pepper flakes for a spicy kick.
  • Substitute ground turkey for a lighter option.
  • Store leftovers in the refrigerator for up to 4 days.
