Easy Taco Bell Enchirito Copycat Recipe

This Taco Bell Enchirito copycat recipe recreates the famous fast-food favorite at home. Soft tortillas filled with seasoned beef and refried beans are rolled up, covered with rich enchilada sauce, and topped with melted cheese. It’s a cheesy, saucy Tex-Mex comfort meal that’s quick and satisfying.

Ingredients
  

  • 1 lb ground beef
  • 4 flour tortillas
  • 1 cup refried beans
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese
  • ¼ cup diced onion
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp cumin
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a skillet cook ground beef and diced onion over medium heat until browned.
  3. Drain excess grease and add chili powder, garlic powder, cumin, salt, and pepper.
  4. Warm the refried beans in a small saucepan or microwave.
  5. Spread a layer of refried beans down the center of each tortilla.
  6. Add a portion of the seasoned beef on top of the beans.
  7. Roll the tortillas tightly and place seam-side down in a baking dish.
  8. Pour enchilada sauce evenly over the rolled tortillas.
  9. Sprinkle shredded cheddar cheese on top.
  10. Bake for 15–20 minutes until cheese melts and sauce bubbles.

Notes

  • Use red enchilada sauce for the most authentic flavor.
  • Add sliced black olives or jalapeños for extra toppings.
  • Serve with sour cream or fresh cilantro if desired.
  • Store leftovers in the refrigerator for up to 3 days.
