- Add olive oil, balsamic, honey, Dijon, salt, and pepper to a jar and shake until smooth.
- Put arugula in a large bowl and drizzle in dressing (start with less, add more if needed).
- Toss gently until the leaves coat evenly.
- Top with peach slices, cheese, nuts, and optional onion/cucumber.
- Finish with a pinch of salt and cracked pepper, then serve right away.
Notes
- Use firm-ripe peaches, so they hold shape and don’t turn mushy.
- Add grilled chicken, shrimp, or chickpeas to make it a full meal.
- Slice peaches right before serving or toss with a little lemon juice to prevent browning.
- Keep nuts and dressing separate until serving to avoid a soggy salad.
