Serve it as a light lunch or a fresh side for grilled chicken or BBQ. One bite and you’ll wonder why you ever settled for boring salad.

Ingredients
  

  • 5 cups baby arugula washed and dried
  • 2 ripe peaches sliced
  • 1/3 cup crumbled feta or goat cheese
  • 1/3 cup pecans or almonds toasted, chopped
  • 1/4 small red onion thinly sliced, optional
  • 1/2 cucumber sliced, optional
  • 3 tbsp extra virgin olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1 –2 tsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Method
 

  1. Add olive oil, balsamic, honey, Dijon, salt, and pepper to a jar and shake until smooth.
  2. Put arugula in a large bowl and drizzle in dressing (start with less, add more if needed).
  3. Toss gently until the leaves coat evenly.
  4. Top with peach slices, cheese, nuts, and optional onion/cucumber.
  5. Finish with a pinch of salt and cracked pepper, then serve right away.

Notes

  • Use firm-ripe peaches, so they hold shape and don’t turn mushy.
  • Add grilled chicken, shrimp, or chickpeas to make it a full meal.
  • Slice peaches right before serving or toss with a little lemon juice to prevent browning.
  • Keep nuts and dressing separate until serving to avoid a soggy salad.
