Garlic Parmesan Chicken and Potatoes

Ingredients
  

  • 4 chicken thighs or breasts
  • 3 cups baby potatoes halved
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley optional, for garnish

Method
 

  1. Preheat oven to 200°C (400°F).
  2. In a bowl, toss potatoes with olive oil, garlic, salt, pepper, oregano, and paprika.
  3. Spread potatoes on a baking tray.
  4. Place chicken on the tray and season with salt and pepper.
  5. Sprinkle parmesan over chicken and potatoes.
  6. Bake for 35–40 minutes until chicken is cooked and potatoes are golden.
  7. Garnish with parsley and serve hot.

Notes

  • Use bone-in chicken for extra juiciness.
  • Flip potatoes halfway for even crisping.
  • Add green beans or carrots for a full meal.
