Method
- Preheat oven to 200°C (400°F).
- In a bowl, toss potatoes with olive oil, garlic, salt, pepper, oregano, and paprika.
- Spread potatoes on a baking tray.
- Place chicken on the tray and season with salt and pepper.
- Sprinkle parmesan over chicken and potatoes.
- Bake for 35–40 minutes until chicken is cooked and potatoes are golden.
- Garnish with parsley and serve hot.
Notes
- Use bone-in chicken for extra juiciness.
- Flip potatoes halfway for even crisping.
- Add green beans or carrots for a full meal.
