Ingredients
  

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1/2 cup spinach or lettuce
  • 1 small tomato sliced
  • 1 tbsp olive oil or butter
  • Salt and black pepper to taste
  • 1 tbsp lemon juice

Method
 

  1. Toast bread slices until golden and crisp.
  2. Mash avocado with lemon juice, salt, and pepper.
  3. Heat oil in a pan and cook eggs to your liking.
  4. Spread mashed avocado on each slice of bread.
  5. Add cooked eggs, tomato slices, and spinach.
  6. Season lightly and close the sandwich.
  7. Serve immediately and enjoy.
