Ingredients
  

  • 1 cup rolled oats
  • 2 cups milk dairy or almond
  • 1/2 cup finely grated carrots
  • 1 tbsp maple syrup or honey
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/2 tsp vanilla extract
  • 2 tbsp raisins optional
  • 2 tbsp chopped walnuts or pecans optional topping
  • 2 tbsp Greek yogurt or cream cheese optional topping

Method
 

  1. Add oats, milk, grated carrots, cinnamon, nutmeg, and ginger to a saucepan.
  2. Bring mixture to a gentle boil over medium heat.
  3. Reduce heat and simmer 5–7 minutes, stirring occasionally, until thick and creamy.
  4. Stir in maple syrup, vanilla, and raisins if using.
  5. Remove from heat and let sit 1–2 minutes to thicken further.
  6. Divide into bowls and top with nuts and yogurt or cream cheese if desired.

Notes

  • Grate carrots finely so they soften quickly while cooking.
  • Adjust sweetness to taste with extra maple syrup.
  • Add chia seeds for extra fiber.
  • Store leftovers refrigerated up to 2 days and reheat with a splash of milk.
