Ingredients
  

  • 2 cups cooked chicken diced or shredded
  • 6 slices bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1 cup chopped romaine or iceberg lettuce
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp garlic powder
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1/4 cup shredded cheddar cheese optional
  • 2 tbsp chopped green onions optional

Method
 

  1. Cook bacon until crispy and crumble into small pieces.
  2. In a large bowl, combine chicken, bacon, tomatoes, lettuce, and cheese if using.
  3. In a small bowl, whisk mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
  4. Pour dressing over chicken mixture and stir until evenly coated.
  5. Fold gently to avoid crushing tomatoes.
  6. Garnish with green onions if desired.
  7. Serve immediately or chill 30 minutes for deeper flavor.

Notes

  • Use rotisserie chicken for faster prep.
  • Add avocado cubes for extra creaminess.
  • Keep lettuce separate if making ahead to prevent sogginess.
  • Store refrigerated up to 3 days in an airtight container.
