Ingredients
  

  • 14 oz smoked sausage sliced
  • 3 medium potatoes diced small
  • 1 small onion diced
  • 1 red or green bell pepper sliced, optional
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp dried oregano or thyme
  • 1/2 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1/4 cup chicken broth optional, for softer potatoes
  • 1/2 cup shredded cheddar cheese optional
  • 1 tbsp chopped parsley or green onions optional garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook 8–10 minutes until lightly golden, stirring occasionally.
  3. Stir in onion, bell pepper, and garlic and cook 2–3 minutes until softened.
  4. Add sliced smoked sausage and cook 5–6 minutes until browned.
  5. Season with paprika, oregano, salt, and pepper and mix well.
  6. Add chicken broth if needed, cover, and cook 5–7 minutes until potatoes are tender.
  7. Sprinkle cheese on top if using and cover briefly until melted.
  8. Garnish with parsley or green onions and serve hot.

Notes

  • Cut potatoes evenly so they cook at the same rate.
  • Use turkey sausage for a lighter option.
  • Add red pepper flakes for extra heat.
  • Store leftovers refrigerated up to 3 days and reheat in a skillet.
