Place chopped cherries in a large saucepan.
Add sugar, lemon juice, and water.
Stir well and bring the mixture to a boil over medium heat.
Reduce heat and simmer while stirring frequently.
Cook for 25–30 minutes until jam thickens.
Mash cherries slightly for desired texture.
Test consistency by placing a small spoonful on a chilled plate.
Remove from heat once jam reaches desired thickness.
Allow jam to cool slightly before transferring to sterilized jars.
Seal jars and refrigerate once cooled completely.
