This honey chipotle chicken rice bowl is a perfect balance of sweet, smoky, and slightly spicy flavors. Tender chicken cooks in a rich honey chipotle sauce and gets served over fluffy rice with fresh toppings. It’s a flavorful, satisfying meal that’s great for lunch or dinner.

Ingredients
  

  • 2 cups cooked white rice
  • 1 lb boneless chicken breast cubed
  • 2 tbsp honey
  • 1 tbsp chipotle sauce or chipotle peppers in adobo minced
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper to taste
  • ½ cup corn kernels
  • ½ cup black beans drained
  • ¼ cup chopped cilantro

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with garlic powder, paprika, salt, and black pepper.
  3. Cook chicken in the skillet for 6–8 minutes until browned and cooked through.
  4. Add honey, chipotle sauce, and lime juice to the skillet.
  5. Stir and cook for 2–3 minutes until the sauce thickens and coats the chicken.
  6. Divide cooked rice among serving bowls.
  7. Top rice with honey chipotle chicken.
  8. Add corn and black beans around the bowl.
  9. Sprinkle chopped cilantro on top and serve warm.

Notes

  • Add avocado slices for extra creaminess.
  • Adjust chipotle amount to control the spice level.
  • Use brown rice or quinoa for a healthier option.
  • Store leftovers in the refrigerator for up to 3 days.
