Ingredients
  

  • 400 g kielbasa sausage sliced
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Method
 

  1. Preheat oven to 200°C (400°F)
  2. In a bowl, mix honey, soy sauce, garlic, olive oil, pepper, and paprika
  3. Add kielbasa and vegetables and toss to coat evenly
  4. Spread mixture on a sheet pan in a single layer
  5. Bake for 20–25 minutes until veggies are tender and slightly caramelized
  6. Stir halfway through for even cooking
  7. Serve hot and enjoy

Notes

  • Do not overcrowd the pan for better roasting
  • Use any vegetables you like
  • Add chili flakes for a spicy kick
  • Serve with rice or potatoes for a fuller meal
  • Great for quick dinners and meal prep
