Ingredients
  

  • 4 chicken breasts
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups ripe mango diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 small jalapeño optional, finely chopped

Method
 

  1. In a bowl, mix honey, lime juice, olive oil, garlic powder, salt, and pepper
  2. Coat chicken in the marinade and let sit for 10–15 minutes
  3. Grill or pan-cook chicken for 6–7 minutes per side until fully cooked
  4. In a separate bowl, combine mango, red onion, cilantro, and jalapeño
  5. Add a squeeze of lime juice and a pinch of salt to salsa
  6. Mix gently and let flavors combine
  7. Top cooked chicken with mango salsa
  8. Serve warm and enjoy

Notes

  • Use very ripe mango for natural sweetness
  • Don’t overcook chicken to keep it juicy
  • Salsa tastes better after resting for 10 minutes
  • Add avocado for extra creaminess
  • Perfect with rice, salad, or tortillas
