Method
- Preheat oven to 180°C (350°F) and line a muffin tray
- In a bowl mix mashed bananas, sugar, and melted butter
- Add egg and vanilla extract and mix well
- In another bowl combine flour, baking soda, and salt
- Gradually add dry ingredients to wet mixture
- Fold in chopped nuts gently
- Fill muffin cups about 3/4 full
- Bake for 18–20 minutes until golden and set
- Let cool before serving
Notes
- Use overripe bananas for the best flavor
- Do not overmix the batter to keep muffins soft
- You can add chocolate chips for extra sweetness
- Store in an airtight container for freshness
