Irresistible Banana Nut Muffins

These banana nut muffins are soft, moist, and packed with rich banana flavor and crunchy nuts in every bite. Ingredients
  

  • 2 ripe bananas mashed
  • 1/2 cup sugar
  • 1/3 cup melted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts or pecans

Method
 

  1. Preheat oven to 180°C (350°F) and line a muffin tray
  2. In a bowl mix mashed bananas, sugar, and melted butter
  3. Add egg and vanilla extract and mix well
  4. In another bowl combine flour, baking soda, and salt
  5. Gradually add dry ingredients to wet mixture
  6. Fold in chopped nuts gently
  7. Fill muffin cups about 3/4 full
  8. Bake for 18–20 minutes until golden and set
  9. Let cool before serving

Notes

  • Use overripe bananas for the best flavor
  • Do not overmix the batter to keep muffins soft
  • You can add chocolate chips for extra sweetness
  • Store in an airtight container for freshness
