- Place grated zucchini in a clean towel and squeeze out excess moisture.
- In a bowl combine zucchini, egg, Parmesan cheese, breadcrumbs, and green onions.
- Add garlic powder, salt, and black pepper and mix well.
- Form the mixture into small patties.
- Heat olive oil in a skillet over medium heat.
- Place patties in the skillet and cook for 3–4 minutes per side.
- Fry until golden brown and crispy.
- Remove from skillet and drain on paper towels.
- Serve warm with a dipping sauce.

- Removing moisture from zucchini helps patties stay crispy.
- Add shredded mozzarella for extra cheesiness.
