Irresistible Crispy Zucchini Patties Recipe

These crispy zucchini patties are golden on the outside and tender on the inside. Fresh zucchini combines with cheese and herbs to create flavorful veggie fritters that are both light and satisfying. They make a perfect snack, appetizer, or side dish.

Ingredients
  

  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs
  • 2 tbsp chopped green onions
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 2 tbsp olive oil for frying

Method
 

  1. Place grated zucchini in a clean towel and squeeze out excess moisture.
  2. In a bowl combine zucchini, egg, Parmesan cheese, breadcrumbs, and green onions.
  3. Add garlic powder, salt, and black pepper and mix well.
  4. Form the mixture into small patties.
  5. Heat olive oil in a skillet over medium heat.
  6. Place patties in the skillet and cook for 3–4 minutes per side.
  7. Fry until golden brown and crispy.
  8. Remove from skillet and drain on paper towels.
  9. Serve warm with a dipping sauce.

Notes

  • Removing moisture from zucchini helps patties stay crispy.
  • Add shredded mozzarella for extra cheesiness.
  • Serve with sour cream, yogurt dip, or garlic sauce.
  • Store leftovers in the refrigerator for up to 2 days.
