Ingredients
  

  • 4 cups mixed greens or arugula
  • 2 ripe peaches sliced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup red onion thinly sliced
  • 1/3 cup toasted pecans or walnuts
  • 3 tbsp extra virgin olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1 tsp honey optional
  • Salt and black pepper to taste
  • Fresh basil or mint optional garnish

Method
 

  1. Add olive oil, balsamic vinegar, honey, salt, and pepper to a small bowl and whisk until combined.
  2. Place mixed greens in a large serving bowl and drizzle lightly with dressing.
  3. Toss gently until greens are evenly coated.
  4. Top with peach slices, feta cheese, red onion, and toasted nuts.
  5. Garnish with fresh basil or mint if desired and serve immediately.

Notes

  • Use firm-ripe peaches so slices hold their shape.
  • Toast nuts in a dry pan for 2–3 minutes for a deeper flavor.
  • Add grilled chicken or shrimp to turn it into a full meal.
  • Keep dressing separate until serving to avoid soggy greens.
