Irresistibly Golden Cheesy Corn Fritters Recipe

These Irresistibly Golden Cheesy Corn Fritters are crispy on the outside and soft and cheesy inside. Sweet corn and melty cheese combine in a simple batter that fries up perfectly golden. They make a great appetizer, snack, or side dish. Serve with sour cream or spicy dipping sauce for extra flavor.

Ingredients
  

  • 1 1/2 cups corn kernels fresh, canned drained, or frozen thawed
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 large egg
  • 1/4 cup milk
  • 2 tbsp chopped green onions
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 2 –3 tbsp vegetable oil for frying

Method
 

  1. In a bowl, combine corn, cheddar cheese, flour, cornmeal, and baking powder.
  2. Add egg, milk, green onions, salt, pepper, and paprika and mix until thick batter forms.
  3. Heat oil in a skillet over medium heat.
  4. Drop spoonfuls of batter into hot oil and flatten slightly.
  5. Cook 2–3 minutes per side until golden brown and crispy.
  6. Transfer fritters to paper towel-lined plate to drain excess oil.
  7. Serve warm with dipping sauce of choice.

Notes

  • Do not overcrowd the pan to keep fritters crispy.
  • Use fresh corn for a sweeter flavor.
  • Add jalapeños for extra spice.
  • Store leftovers refrigerated up to 2 days and reheat in a skillet.
