Method
- Cook pasta according to package instructions then drain and cool completely
- In a large bowl combine pasta salami mozzarella and cherry tomatoes
- Add basil pesto olive oil and lemon juice then toss until well coated
- Season with salt and black pepper to taste
- Garnish with fresh basil and drizzle balsamic glaze if desired
- Chill for 15-20 minutes before serving
Notes
- Use pepperoni instead of salami for a spicier flavor
- Add olives or roasted peppers for extra Mediterranean taste
- Fresh mozzarella gives the best creamy texture
- Best served cold and consumed within 2 days
