- Preheat oven to 375°F (190°C)
- Heat olive oil in a pan over medium heat
- Sauté onion until soft, then add garlic
- Add ground beef and cook until browned
- Season with salt, pepper, and Italian seasoning
- Stir in chopped spinach and cook until wilted
- Add marinara sauce and mix well
- Place zucchini halves on a baking tray
- Fill each zucchini with the beef mixture
- Top with mozzarella and parmesan cheese
- Bake for 20–25 minutes until zucchini is tender
- Garnish with fresh herbs and serve warm
Notes
- Scoop out extra zucchini flesh for more filling space
- Use turkey instead of beef for a lighter option
- Avoid overbaking to keep the zucchini firm
- Add red pepper flakes for extra heat
