Keto Beef and Spinach Stuffed Zucchini Boats

Ingredients
  

  • 4 medium zucchinis halved lengthwise, seeds scooped
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 small onion chopped
  • 1 cup fresh spinach chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/2 cup marinara sauce low-carb
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 tbsp fresh basil or parsley chopped

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Heat olive oil in a pan over medium heat
  3. Sauté onion until soft, then add garlic
  4. Add ground beef and cook until browned
  5. Season with salt, pepper, and Italian seasoning
  6. Stir in chopped spinach and cook until wilted
  7. Add marinara sauce and mix well
  8. Place zucchini halves on a baking tray
  9. Fill each zucchini with the beef mixture
  10. Top with mozzarella and parmesan cheese
  11. Bake for 20–25 minutes until zucchini is tender
  12. Garnish with fresh herbs and serve warm

Notes

  • Scoop out extra zucchini flesh for more filling space
  • Use turkey instead of beef for a lighter option
  • Avoid overbaking to keep the zucchini firm
  • Add red pepper flakes for extra heat
