Keto Chicken Zucchini Noodle Stir Fry

Ingredients
  

  • 2 large chicken breasts sliced thin
  • 3 medium zucchinis spiralized into noodles
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 1 tbsp ginger grated
  • 2 tbsp soy sauce or coconut aminos for strict keto
  • 1 tbsp sesame oil
  • 1 tbsp butter
  • 1/2 tsp chili flakes optional
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup green onions chopped
  • 1 tbsp sesame seeds optional

Method
 

  1. Heat olive oil in a large pan over medium heat
  2. Add chicken and cook until golden and fully cooked then remove and set aside
  3. In the same pan add butter garlic and ginger sauté until fragrant
  4. Add zucchini noodles and stir fry for 2-3 minutes until slightly tender
  5. Return chicken to the pan and mix well
  6. Add soy sauce sesame oil chili flakes salt and pepper
  7. Toss everything together and cook for 2-3 minutes
  8. Garnish with green onions and sesame seeds and serve hot

Notes

  • Do not overcook zucchini noodles to avoid sogginess
  • Use chicken thighs for extra juiciness
  • Add mushrooms or bell peppers for more texture
  • Best served fresh for the best taste and texture
