Ingredients
  

  • 1/2 cup coconut oil melted
  • 1/2 cup cream cheese softened
  • 1/4 cup unsweetened shredded coconut
  • 2 –3 tablespoons keto sweetener erythritol or monk fruit
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. In a bowl, mix melted coconut oil and softened cream cheese until smooth
  2. Add keto sweetener, vanilla extract, and salt
  3. Mix until fully combined and creamy
  4. Stir in shredded coconut
  5. Pour or spoon mixture into silicone molds or a lined tray
  6. Smooth the tops evenly
  7. Refrigerate for at least 1–2 hours until firm
  8. Remove from molds and serve chilled

Notes

  • Keep stored in the refrigerator to maintain shape
  • Adjust sweetness to taste
  • Add cocoa powder for a chocolate version
  • Use silicone molds for easy removal
