Keto Crockpot Beef Stew (Low Carb)

Ingredients
  

  • 2 lbs beef chuck cut into cubes
  • 2 tbsp olive oil
  • 3 cups beef broth low sodium
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 2 celery stalks chopped
  • 1 cup mushrooms sliced
  • 1 cup zucchini chopped
  • 1 cup cauliflower florets
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp tomato paste optional, low carb
  • 1 bay leaf

Method
 

  1. Heat olive oil in a pan and brown beef cubes
  2. Transfer beef to crockpot
  3. Add garlic, onion, celery, mushrooms, zucchini, and cauliflower
  4. Pour in beef broth and add tomato paste if using
  5. Season with salt, pepper, thyme, rosemary, and bay leaf
  6. Stir gently to combine
  7. Cover and cook on low for 6–8 hours or high for 3–4 hours
  8. Remove bay leaf before serving
  9. Stir well and serve hot

Notes

  • Browning beef first adds deeper flavor
  • Add extra broth if you prefer a soupier stew
  • Use turnips instead of potatoes for more texture
  • Let the stew sit 10 minutes before serving to thicken slightly
