Ingredients
  

  • 4 eggs
  • 1/2 cup cooked sausage or bacon crumbled
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup bell peppers chopped
  • 1/4 cup onion chopped
  • 1 tablespoon butter or oil
  • 1/4 cup avocado sliced
  • 2 tablespoons salsa
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Heat butter in a pan over medium heat
  2. Sauté onion and bell peppers until soft
  3. Add eggs, salt, and pepper and scramble until cooked
  4. Stir in cooked sausage or bacon
  5. Divide mixture into serving bowls
  6. Top with shredded cheese, avocado, and salsa
  7. Serve warm and enjoy

  • Add jalapeños for extra spice
  • Use rotisserie chicken as an alternative protein
