Keto Ground Beef Eggplant Bake

This hearty and flavorful bake layers tender eggplant, savory ground beef, and rich cheese for a perfect low-carb comfort meal. It’s a keto-friendly alternative to lasagna without the pasta. Baked until bubbly and golden, it’s filling, nutritious, and great for family dinners. Ideal for meal prep and leftovers too.

Ingredients
  

  • 2 medium eggplants sliced into rounds
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1/2 small onion chopped
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 cup marinara sauce low-carb
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tbsp fresh basil chopped

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Lightly salt eggplant slices and let sit for 10 minutes, then pat dry
  3. Heat olive oil in a pan over medium heat
  4. Sauté onion until soft, then add garlic
  5. Add ground beef and cook until browned
  6. Season with salt, pepper, and Italian seasoning
  7. Stir in marinara sauce and simmer for 5 minutes
  8. Layer eggplant slices in a baking dish
  9. Add a layer of beef mixture, then repeat layers
  10. Top with mozzarella and parmesan cheese
  11. Bake for 30–35 minutes until bubbly and golden
  12. Garnish with fresh basil and serve warm

Notes

  • Pre-salting eggplant reduces bitterness
  • Grill or roast eggplant slices for extra flavor
  • Let the bake rest before serving for easier slicing
  • Add ricotta cheese for a creamier texture
