Keto Ground Beef Skillet with Zucchini

A simple, hearty, and low-carb one-pan meal made with seasoned ground beef and tender zucchini. This keto-friendly skillet is quick, flavorful, and perfect for busy weeknights or meal prep.

Ingredients
  

  • 500 g ground beef
  • 2 medium zucchinis chopped
  • 1 onion finely chopped
  • 3 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp chili flakes optional
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp tomato paste optional
  • 1/4 cup fresh parsley chopped

Method
 

  1. Heat olive oil in a large skillet over medium heat
  2. Add onion and cook until soft
  3. Add garlic and sauté until fragrant
  4. Add ground beef and cook until browned
  5. Stir in paprika Italian seasoning salt pepper and tomato paste
  6. Add chopped zucchini and cook for 5-7 minutes until tender
  7. Sprinkle cheddar cheese on top and let it melt
  8. Garnish with fresh parsley and serve hot

Notes

  • Do not overcook zucchini to keep the texture slightly firm
  • Add mushrooms or bell peppers for variation
  • Use ground turkey as a lighter alternative
  • Best served fresh, but can be stored in the fridge for 2-3 days
