Method
- Preheat oven to 180°C (350°F)
- Heat olive oil in a pan and sauté onion and garlic until soft
- Add ground beef and cook until browned
- Stir in taco seasoning paprika salt pepper and tomato sauce
- Simmer for 5-7 minutes until slightly thickened
- Fill each bell pepper half with beef mixture
- Top with cheddar and mozzarella cheese
- Bake for 25-30 minutes until peppers are tender and cheese is melted
- Garnish with fresh cilantro and serve hot
Notes
- Use different colored bell peppers for a vibrant presentation
- Add cauliflower rice to the filling for extra volume
- Adjust spice level with extra chili flakes or jalapeños
- Best served fresh, but can be stored in the fridge for 3 days
