Ingredients
  

  • 2 15-ounce cans chickpeas, drained and rinsed
  • 1 English cucumber diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely diced
  • ¼ cup fresh parsley chopped
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons fresh mint chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove minced
  • ½ teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Place the chickpeas, cucumber, cherry tomatoes, red onion, parsley, dill, and mint into a large mixing bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, Dijon mustard, garlic, oregano, salt, and black pepper.
  3. Pour the dressing over the salad ingredients.
  4. Toss gently until everything is evenly coated.
  5. Let the salad rest for 10 minutes to allow the flavors to blend.
  6. Serve chilled or at room temperature with extra fresh herbs if desired.

  • Fresh lemon juice provides the brightest flavor.
